I never really know what I’m going to do with the fish I buy after buying it. I saw at my fish store some wild organic salmon and knew I wanted it. Came home and needed a quick dinner. Here’s what I did.
Took some of my organic dinosaur kale, slivered it, did the same to my organic romaine. Put it in a big bowl with a little organic extra virgin olive oil and a squeeze of lime juice and a splash of my best balsamic, some sea salt and fresh black pepper.
Turned the broiler on to high. Took the salmon and brushed it with dijon mustard, some smashed fresh garlic and a little balsamic, salt and pepper , rubbed it in and sprinkled some lime juice. Let it sit about 20 minutes.
Into a small sauce pan I added a small can of yellow and red organic bpa free tomatoes that I happened to have. First I sauteed a little garlic and onion , then added tomatoes and brought to a simmer. I usually use chopped fresh tomatoes, but I had these and wanted to try them.
Don’t forget to add fresh chopped cilantro and a squeeze of lime juice.
Took my white corn tortillas and warmed them in the oven.
Have to say that this dish (like all your recipes) was both delicious and nutritious
