When you don’t eat red meat, veal, pork or lamb you must get creative with your lunches. Sometimes you just don’t want to eat anymore turkey. Paninis, reubens, salads with chicken and veggies just won’t do. You need a burger every once in awhile. We are lucky enough to have a Fresh Market in our town. All their poultry is free range, antibiotic free from their farm in the Carolina’s. Very good quality, you can really taste the difference. They grind their own turkey and chicken on a daily basis. Today they had some white meat turkey ground and fresh. Here’s what I did with it to make it very tasty.
Put one pound of ground turkey into mixing bowl. Added two cloves of fresh garlic squeezed through my press. Then added 1 tablespoon dijon mustard, and 1 tablespoon aged balsamic vinegar. Hit it with salt, pepper and a dash of low salt tamari (soy sauce). Then added a little crunchy panko, maybe 1/3 of a cup.
Mixed it all together. Made 3 burgers.
Took out my grill pan. Preheated it and sprayed it with a canned neutral oil.
Cooked on high for about 2 minutes, then turned to low and continued to cook a few more minutes adding sliced mushrooms and red onions to the grill pan.
Turned over and added a quick splash of balsamic to the pan and cooked another few minutes, then added a little cheddar cheese.. Covered pan and cooked about 2 minutes till cheese was melted. Total cooking time was about 6-8 minutes.
Put on a brioche bun, with some Peter Luger’s sauce instead of ketchup, added organic greens along with my buttermilk ranch dressing. You will not miss the meat I promise, it was fantastic. Be careful not to overcook.
