Tabouli chopped salad
Found a new product at Trader Joes, comes in a bag, 10 minute bulgur wheat. I always found the process of making this grain a little too time consuming so this was great for me. I love tabouli and decided to create a different variation.
You simply boil a pot of water, throw in the grain and let boil for 10 minutes. Then drain the water and let the bulgur wheat cool in a bowl.
Chop and seed some plum tomatoes, or any that you like
Chop cucumbers
Chop scallions
Chop roasted golden beets (I simply baked them like a potato and then skinned them)
Chop parsley, mint , basil
Add baby organic spinach optional
Make a vinagrette of 3 parts extra virgin olive oil to 1 part vinegar (i used a great aged balsamic) but you can use red wine vinegar, added a squeeze of lemon.
Mix it all together and add salt and pepper to taste. Additonal herbs.
What a great side salad for your holiday barbeque. Forget the store bought cole slaw and potato salad!
