Fresh roasted chick pea hummos with roasted garlic , lemon and zahtar

This is a pretty simple hummos recipe using fresh soaked overnight in cold water chick peas, but if you don’t have the time I also will use organic canned chickpeas. Just drain the water and rinse. I just think the fresh ones taste way better. I boiled 3 cups of chick peas in water till soft, added salt and then pureed them in a food processor till smooth consistency, adding as much water as needed to get the consistency right. Then I took about a tablespoon of tahini (sesame paste) very high in fat and calories and you don’t need much for flavor, a squeeze of fresh lemon juice, salt, pepper to taste. Added chopped fresh parsley, could add a roasted pepper to the mix (process) but i didn’t, i just decided to use the Middle Eastern spice Zahtar which gave it much flavor along with some roasted garlic cloves i also added to the food processor. Whizz it all together , used about a teaspoon or more of zahtar and finished it with a drizzle of extra virgin olive oil.
Taste and add more water, olive oil or spice as needed.
Also added some fresh roasted chick peas to the mix. After then were boiled and soft you can bake them with a little olive oil till crunchy and munchy.
