Nice Balsamic Vinegar
Roast some plum tomatoes to make them sweeter and better even in the dead of winter.
Preheat oven to 350.
1. Simply split in half, clean out seeds, put on a baking dish, season with a little sea salt, pepper, fresh thyme, drizzle extra virgin olive oil and a splash of a nice balsamic vinegar.
2. Roast at 350 for approx 1/2 hour till they’re tender and very red and sun dried looking.
Let me know how you like it…. amazing difference. Serve with fresh mozzarella and basil, or chop and use in soups, salads, pasta dishes.
