Cobb salad with ahi tuna, snap peas, avocado, tomato, golden beets, roasted peppers. Veggies and protein change with seasonal availability and preference.
Cobb salad with chicken, turkey bacon, etc – Recipe below
Ingredients:
Option 1: 1lb Ahi Tuna, grilled medium rare (2 minutes on 1 side, 3 minutes on the other) & thinly sliced
Option 2: Chicken cutlets marinated in basil roasted garlic puree – see notes below
A few pieces of turkey bacon (organic if possible)- chopped up
Chopped roasted tomatoes (in notes below)
Chopped boston lettuce, and mixed organic baby greens
Red onion chopped, chopped cuke, raw brocci florets, blue cheese bits
Directions:
1. Take out the grill pan and grill the turkey bacon and chicken. Chop bacon and slice up chicken. Make a vinagrette.
2. 1 tablespoon dijon mustard, add the basil roasted garlic puree to taste along with 3 parts evoo to 1 part white balsamic. Put in a empty dijon mustard jar and shake it up baby.
3. Now add everything into a big bowl.
4. At the end i added along with the already chopped tomatoes some yellow cherry tomatoes straight from the farm.

Notes:
I used organic plum tomatoes, not roasted this time, and simple grilled the cutlets with a little dash of herbs du provence and evoo. Got the grill pan hot, and grilled a few minutes on each side, threw 2 pieces of turkey bacon in there. Total cooking time 5 minutes. Make the vinagrette or to make it even easier just drizzle with a great balsamic, a dash of evoo, chopped parsley and some blue cheese bits.
You don’t have to roast the garlic, can just use some chopped fresh garlic, also add a drizzle of honey to the basil dijon vinaigrette.
